Though India is not a uniform entity, what one does see is across all plates, North AND South Indian, is an even spread of items which complement each other not only in taste, but also nutrition, palatability and visual appeal.

 

A typical North Indian meal, be it in Punjab or Bengal, will consist of an Item of Grains (such a rice, roti, Puri or paratha) a legume ( dal, rajma or a dry/curried lentil) a curried vegetable, and a dry/shallow fried vegetable.

 

(In the South, the grain item might be a Dosa or Idli too, and that is the only difference I have seen in Northern and Southern Meal structure)

 

Notice how the grain item (Like rice/ dosa) can not be eaten by itself but always with the legume (dal/sambhar). This goes in line with dietary recommendations that the meal should consist of a balance of carbohydrates and proteins. Also, the curried vegetable ( tari/ ras/ jhol in the North and Koot in the South) complements the dry one ( Bhaji in the North and Poriyal in the South) and forms the supply of fibre. 

 

Chutney is a freshly ground condiment,while Achaar is a seasoned, pickled one. Papad is served at the beginning ( as in Sindhi cuisine), along with (as in most others) or at the end of the meal (as in Bengal).

 

While Punjab/ Kashmir being colder regions have a lot of grease and spices to make the food wholesome enough, Bengali Cuisine depends on Mustard oil. Gujarat and Rajasthan adds boatloads of chilis to their food, which increases the blood flow and cools the skin, helping in the punishing heat in these places. 

 

While Rajasthani food counters this by adding a whole lot of oil/ ghee, Gujarati food is balanced by adding jaggery- leading to the "sweet" taste.

 

Maharashtra has a fancy for drier vegetables, like brinjal, and depends a lot on groundnuts for flavouring (Much the same way Coconut is used in the South).

 

Bihari food is known for its simplicity, much like the people and has the simplest composition in North India.

 

Curds are served in the form of Chhaas/ Chhachh in Gujarat and Rajasthan ( much like the More in the South) while it is served whole in a bowl, in Punjab/ Bihar. 

 

Most people would like some onions/ cucumbers/ raddish along with their meals, but the onion would be sliced thin in Delhi, cut vertically into four pieces in Bihar and Bengal, minced small in Gujarat, and crushed with your hand in Punjab.

 

When it comes to sweets, most of the North serves it at the end of the meal, while Gujarat and Rajasthan puts it among the Thali items ( the principal being that eating sweets between the meal spikes your hunger). In Bengal, a meal might be ended with Mishti Doi ( Sweet caramel flavoured curd) - Rosogollas are more of a savoury item offered to guests - or even fried papad served with sweet pineapple chutney ( which is jam like in taste and consistency). Punjab, with its rich a zestful flavours, will make that a Halwa.

 

Most North Indian plates are large enough to hold the bowls within them, with Bengal being an exception where the bowls are placed outside the plate, much smaller in size. Communal meals might be served on Banana leaves ( Unlike the South though, the leaf is cut along the spine into half) or on plates made of Sal leaves stitched together. 

 

Punjabis tear their rotis with three/ four fingers, while in Gujarat he rotis are small enough to be eaten whole in one or two morsels. Bengal does not have a roti culture but occasionally serves puris (called Luchi) Bengalis use their entire palm to mix the rice together, while Gujaratis would do that with the tips of their fingers. Also common to most regions is the Kadhi, which is somewhat like the More Korumbu of the South - thick yoghurt gravy spiced up. When served, the meal would not include a liquid dal, but a more dry variant of the legume.

 

Bengalis begin their meal with the first vegetable being Shukhto, a mix of all the bitter vegetables in the market, which no sane person would eat individually, but which mix together to form the most appetising starter. Gujaratis often include Farsaan, which would be small savoury items otherwise served as snacks, but which add to the variety of the meal.

 

Kashmiri food might be the most elaborate, meeting its match only in the Lucknowi cuisine, and includes generous doses of dry fruits to add flavour.

A sub genre of cuisine would be the Muslim influenced Nawabi cuisine, with extreme doses of flavourings like Kewra, and the paper thin Roomali Roti. Not to mention their contibution to Indian Cuisine, the Phirni
